A TANGY TOAST
Few things brighten up a cold, dark winter like a splash of citrus in a sparkling
martini glass. And few martinis are more memorable that our house-made Ruby Red
Grapefruit Martini. We infuse grapefruits at their peak of ripeness into Prairie
Organic Vodka and add a touch of sweet agave nectar. The infusion process is actually
on display on the corner of the bar for you to observe. We invite you to enjoy a
little sunshine in a glass this winter.

A MORE TASTEFUL PEAR
Fresh pears, can make for an incredible accompaniment to pork and chicken entrées.
So what is the ideal way to prepare pears as a side dish? Chef Pleau proposes roasting
them. Just as roasting vegetables brings out their most intense flavors, roasting
fruits gives them a rich, caramelized taste. And about pears in particular, Chef
Pleau says this: "This fruit is so amazing. The sugars rise to the top while roasting-it
actually glazes itself with its own sugars." To concentrate the natural sugars,
Chef Pleau adds a gentle brushstroke of olive oil and a sprinkle of salt and pepper,
then finishes the dish with a cranberry chutney. This season, enjoy these most flavorful
pears with our Wood Roasted Pork Tenderloin to our Springer Mountain Farm All-Natural
Grilled Chicken.

Valley, Chile. Carmenere is a uniquely Chilean varietal-very expressive and fruit-forward.
